Air Fryer Mickey Beignets and Copycat Mint Juleps

Quick and easy 2 ingredient Mickey beignets baked in the air fryer for maximum crispiness. Plus a simple Mint Julep copycat recipe to enjoy alongside your beignets. Just like if you were at Disneyland's Mint Julep Bar or Disney World's French Quarter Resort!

Air Fryer Mickey Beignets

  • 1 pkg Pillsbury Grands! Original Biscuits, 8 ct, 16.3 oz
  • 1 cup Powdered Sugar

Mint Juleps

  • 5 cups Water
  • 1 cup Granulated Sugar
  • ¼ cup Creme de Menthe Syrup See Recipe Notes for a homemade version
  • ¼ cup Frozen Lime Juice Concentrate, Thawed
  • 1 cup Frozen Lemonade Concentrate, Thawed
  • Maraschino Cherries, Lemon Wedges, & Mint Leaves for Garnish


Air Fryer Mickey Beignets

  • Preheat air fryer to 350 degrees Fahrenheit.
  • Open Pillsbury biscuits package and separate each biscuit.
  • Roll or stretch each circle of biscuit dough so that your Mickey cookie cutter will fit.
  • Cut out 1 Mickey shape from each biscuit round using your Mickey cookie cutter. For a total of 8 Mickey beignets.
  • Spray or brush the inside of your air fryer with oil.
  • Working in batches, add the Mickey beignets to the air fryer to be baked. Making sure not to overcrowd the air fryer.
  • Bake Mickey beignets for 7-8 minutes, flipping each beignet halfway through the cooking time.
  • Remove finished Mickey beignets to a plate or serving dish and dust with powdered sugar to your liking.
  • Enjoy immediately!

Copycat Mint Juleps

  • Combine water and granulated sugar in a medium saucepan and bring to a simmer.
  • When the sugar is completely melted, turn off the heat and add the Creme de Menthe syrup.
  • Let this mixture cool for about 10 minutes.
  • Transfer to a pitcher and add in lime juice, and lemonade concentrates, and stir to combine.
  • Chill until serving time.
  • Serve over ice and garnish with lemon wedges, maraschino cherries, and mint leaves; if desired.


Homemade Creme de Menthe Syrup: Muddle 1 cup of Mint leaves and set aside. Combine 1/2 cup of water and 1/2 cup of granulated sugar in a saucepan and bring to a simmer. Add muddled mint leaves. Simmer together for 10 minutes. Remove from heat and allow to cool slightly. Strain out mint leaves if desired. This homemade syrup recipe will yield more than the amount required in the Mint Julep recipe. So you can make extra Mint Juleps, or save it for later.
